Nacho Same Old Mexican Meal

Back when I was in college, I didn’t have much money to eat out. When I did treat myself, I always went to a local Mexican restaurant, where I would order my entrée right from the appetizer menu. It was a dish called Notso Macho Nachos, and it’s one of my favorite memories of those days.

I have tried in vain to recreate that delicious medley of chips and cheese at home, so when I discovered that Tastefully Simple’s 30-Minute Meals 10-Meal Kit included a recipe for Queso Chicken Nachos, I was stoked.

I admit I was a little skeptical about the whole “ready in 30 minutes” deal, because my previous attempts to make this ostensibly simple dish have involved a lot of fiddling around with ingredients, with nacho great results. But surprise! I assembled the ingredients and had my feast in the oven in under 15 minutes. Ten minutes more and was ready to sit down with a platterful of yum. I used the full gamut of toppings, including diced tomatoes (from my own garden!), onions, sliced black olives, guacamole and sour cream. If you’re more adventurous than me, you can also add chopped jalapenos.

Full disclosure: I made a couple of adjustments to the original recipe. I added dollops of canned refried beans to the layers of chicken, Monterey Jack Queso and shredded cheese, because my old college favorite had that ingredient. And I used a bit more cheese than called for, because … cheese.

The chicken, seasoned with Mom’s Favorite Taco Seasoning, was so easy and so delicious (next time I’ll use batch-cooked Magic Taco Chicken I keep in the freezer for even quicker and easier prep). And I love the Monterey Jack Queso so much that I could suck it up with a straw right from the jar. All in all, this recipe was as close to my memory of good ‘ol Notso Macho Nachos as I’ve ever tested. Thanks, Tastefully Simple, for the nostalgia trip!
