‘Tis the season for fish. And cheap fish sandwiches are certainly available in abundance. But as cheap as they are, are they really worth it? Fish is so easy to make at home. Really – marinate, then cook. No flipping, no frying, no fussing. Bake some potatoes, microwave some veggies, and that’s it – a healthy meatless meal with flavor. Easier than the drive-thru.

Bayou Bourbon Salmon
Ingredients
- 1 tsp. pepper
- 4 salmon filets
Directions
Preheat oven to 350°. Combine ingredients; place in a resealable plastic bag. Refrigerate 1 hour. Drain salmon and place in a greased baking dish; bake at 350° for 20-25 minutes or until salmon flakes easily with a fork. Makes 4 servings.
Tips and Hints
- If you buy salmon with the skin on, place the filets skin-side-down on the baking sheet.
- To grill salmon, place marinated filets on a sheet of greased tin foil. Grill on the foil over medium-high heat for 10-15 minutes or until fish flakes easily.
- Sprinkle filets with Seasoned Salt before marinating.
