Cinnamon Muffin Melts

Psst … I have a secret about how you can be the BEST auntie (or uncle) in the whole wide world. Want to hear more? I have six nieces and nephews and out of everything I have ever made for them (which is a lot of things), Cinnamon Muffin Melts are the #1 fave. Followed closely by Dill Pickle Dip Mix. What is it with kids and pickles? But back to those muffins. They love making them, they love eating them, they love EVERYTHING about Cinnamon Muffin Melts! Seriously. It’s almost weird … but I don’t questions it because A) kids are inherently weird and B) Cinnamon Muffin Melts are easy!

So this weekend, if you want to make some kid’s day – maybe your kid or maybe someone else’s kid – whip up a batch of Cinnamon Muffin Melts. And possibly some Dill Pickle Dip – kids generally don’t have issues with odd combos. And hey – they love doing a formal “taste testing” – so why not create a ballot? Cinnamon Muffin Melts Preparation

Preheat oven to 400°. Combine Packet 1 with water; blend well. Divide batter evenly among 12 greased muffin cups. Bake 16-18 minutes. Cool in pan for 10 minutes. Melt butter in a shallow bowl. Pour Packet 2 in a separate shallow bowl. Sparingly coat each warm muffin in butter; immediately roll in cinnamon-sugar coating. Cool completely. Makes 12 muffins. High Altitude: Add 2 Tbsp. flour and 1 additional Tbsp. water to batter. More Ways to Mix It Up! Add ½ cup raisins, pecans, dried cranberries or peeled, chopped apple to batter before baking. Bake mini-muffins at 400° for 10-11 minutes. Makes 30 mini-muffins.

Tips and Hints

  • Instead of dunking the muffins in melted butter, I brush it on with a pastry brush. It’s easy AND you get by with about half the butter.
  • If you want to make things super fast, bake the muffins in paper liners, then dunk just the tops in butter and cinnamon and sugar.
