Chicken Sausage Foil-Pack Dinner

I’m the typical mom of two – running here and there for baseball, softball, basketball camps, volleyball, swimming – all after working a very full day. I often have no idea what’s for dinner until I get home and have very little time to prepare it. This recipe is perfect for those busy weeknights when you don’t have a lot of time, need to get dinner ready in a hurry and want to give your family something better than a frozen pizza or chicken nuggets. And, even better, it’s made in a foil pack so there’s very little mess to clean up afterwards – BONUS!

I’ve provided step-by-step directions here, but really, it’s super easy so you could just skip to the recipe below if you’d prefer.

Preheat the grill to medium heat. Prepare all of your ingredients. This is a step you could do ahead to save time.

Cut the sausage into slices.

Cut potatoes into ¾-inch chunks.

Chop carrots into 1-inch pieces.

Dice green bell pepper.

Chop onion into small pieces.

Lay out two pieces of foil and spray with non-stick cooking spray. Spread half the sausage, potatoes, carrots, green peppers and onions. Drizzle with 1½ Tbsp. Avocado Oil and sprinkle with ½ Tbsp. Everyday Grillin’ Seasoning.

Fold foil to seal well and repeat for remaining ingredients. Place on grill and cook 30-40 minutes or until vegetables are tender.

Preheat grill to medium. Spray two pieces of foil with non-stick cooking spray. Spread half the sausage, potatoes, carrots, pepper and onion. Drizzle with 1½ Tbsp. Avocado Oil and ½ Tbsp. Everyday Grillin’™ Seasoning. Fold foil to seal. Repeat to make a second foil pack with remaining ingredients. Grill over medium heat for 30-40 minutes or until vegetables are tender. Makes 4-6 servings. 

Tips and Hints

  • You could use any kind of ring-style sausage – turkey, kielbasa, etc.
  • Feel free to mix and match your favorite vegetables. I think zucchini would be fabulous in this recipe.
  • You could try seasoning with other Tastefully Simple seasonings like Seasoned Salt or Rustic Herb Seasoning.
