I love soup. My favorite kinds are hearty, chunky soups that eat like a meal. I love the way soup warms you from the inside out as you eat, especially as the nights get cooler and fall approaches. And I love that soup is relatively simple as far as cooking goes.
I want to share seven recipes that are easy to prepare. I love that they are made in one pot (for simple clean-up and fewer dishes to wash) or in the slow cooker (set it and forget it; dinner will be ready in a few hours).
- Easy Chicken Noodle Soup Homemade chicken noodle soup in about 30 minutes? Yes, please! I agree with the 5-star rating given to this recipe.
- Chicken Enchilada Soup This soup is amazing. All the ingredients go into the slow cooker, then simply stir and cook on low for 7-8 hours. Prep it in the morning and come home after work to dinner that’s ready to eat.
- Tuscan Chicken & Bean Soup This soup can be made in an electric pressure cooker or in a slow cooker. It tastes like a trip to Italy.
- French Onion and Beef Soup French onion soup is one of my very favorites. This version is made in your slow cooker. The beef stew meat is a welcome addition and makes this soup extra hearty.
- Tex Mex Potato Corn Chowder This soup can be ready in less than 30 minutes and tastes like it was simmered for hours. It has a little Tex-Mex kick and is delicious topped with a dollop of sour cream and sprinkle of green onion.
- Mediterranean Meatball Soup This soup’s seasoned tomato broth is so good, and the veggies taste so fresh. The second time I made this recipe I used pre-made meatballs – a time-saving trick for when you need dinner in a hurry.
- Creamy Reuben Soup All the goodness of a reuben sandwich in a soup. This creamy potato soup is accessorized with corned beef, sauerkraut and Swiss cheese. Yum!
