Packed with protein and heart-healthy vegetables, there are so many reasons to love stir-fry dinners. But as a busy mom, I have to admit: I have a couple extra hidden motives.

Most stir-fry recipes are ready on the table in only 30 minutes or less, making them perfect for busy weeknights filled with homework and sports practice.

Plus, you can always personalize them with your favorite meats and veggies if you have any pint-sized picky eaters at your house. Dislike peppers? Use baby carrots instead. Love extra crunch? Toss in some sliced water chestnuts or chopped nuts. Mix and match different combinations to your heart’s content. You really can’t mess it up!

2. Pineapple Shrimp Stir-Fry. Filled with fresh island flavors, this tropical stir-fry sizzles with shrimp, bell peppers, snow pea pods and a splash of pineapple sweetness.

7. Teriyaki Salmon Stir-Fry. Wait … salmon in a stir-fry? It’s actually delicious!

Marinated with teriyaki sauce, fresh chunks of salmon sizzle with fresh green beans and mushrooms. Tip: don’t over-stir! Cutting your salmon in bigger chunks will help ensure it doesn’t flake apart, too.

8. Sesame Ginger Beef Stir-Fry. Thinly sliced flank or flat iron steak is wonderful for stir-fry, too. In fact, we made this hearty recipe at our house this week, substituting a couple veggies with our own family favorites like baby corn, mushrooms and broccoli.

Swirling with sesame, ginger, orange juice and savory spices, the marinade is what makes all the difference for perfectly fork-tender beef.
