A Wee Taste O' Ireland

Did you know that nearly 10% of Americans claim Irish ancestry? About one-third Irish on my mother’s side, I’ve always loved the culture, and especially the traditional music, of Ireland. The native foods, on the other hand? Apart from potatoes – which I have an apparently genetically-induced obsession for – I’m not very familiar with Irish eats. Ahead of St. Paddy’s Day this year, however, I decided to see if there is any culinary gold in that pot at the end of the rainbow.

Surprise! After an Internet search that produced native dishes like “blood pudding,” “potted herring” and “dried seaweed snacks” (all a bit exotic for someone whose previous foray into Irish food is limited to Shamrock Shakes), I found some more accessible St. Patrick’s Day-themed recipes on Tastefully Simple’s website. Best of all, they’re not only tasty, but easy to make, too. Now THAT’S what I call the luck of the Irish. Here are my favorites:

Better Than Grandma’s Irish Bread.

It’s easy to see why this recipe, featuring Bountiful Beer Bread Mix®, is a five-star favorite. Made with milk or buttermilk and packed with sweet raisins, it’s what’s for breakfast on St. Paddy’s Day or anytime.

Baked Reuben Sliders.

This is the dish you’ll want to bring to a St. Patrick’s Day potluck or serve for supper any night of the week. Corned beef and sauerkraut (well, that’s a kind of cabbage) are the Irishy elements of this easy main dish, given a zesty boost from creamy Vidalia® Onion Dressing.

Corned Beef Potato Soup.

Vidalia Stout Pot Roast.

’Tis said every Irish cottager has their own recipe for traditional apple cake. Often made with tart crab apples and drizzled with custard sauce, this version is a simply delightful – emphasis on simple. I subbed gently warmed Creamy Caramel Sauce for the custard.
