6 Simple Dishes for St. Patty’s Day
1. Reuben Casserole. Salty corned beef. Melty Swiss. Crunchy kraut with bits of tart apple.
So hearty and comforting, this classic casserole is the perfect side dish for a St. Patty’s Day dinner – or anytime for all of you Reuben fans out there!
2. Baked Reuben Sliders. Love Reuben sandwiches? Try these easy corned beef sliders.
3. Better Than Grandma’s Irish Bread. Did you know that Irish soda bread dates back to the early 1800s? Here’s a modern-day twist on this traditional favorite (and you only need four ingredients!):
I love to stir up this bread with buttermilk and dried cranberries, along with a little orange zest. Serve these thick fresh-baked slices warm from the oven, topped with sweet cream butter.
4. Cookies ‘n Irish Cream Trifles. Luscious little chunks of chocolate cake. Velvety Irish cream mousse. Crushed Oreo cookies. Who wouldn’t want to raise a glass filled with one of these mini trifles?
Serve in Irish coffee mugs for a festive touch. If you’re entertaining with friends, add a sprig of fresh mint for garnish, too. (It’s the next best thing to a four-leaf clover.)
5. Pot o’ Gold Cupcakes. For your littlest leprechauns, stir up these sweet almond cupcakes, topped with swirls of cream cheese frosting, green sprinkles and chocolate gold coins.
Tip: you can typically find chocolate coins at your local party store, candy shop or even online via Amazon. If you’re having a party, they are a fun and inexpensive way to decorate your table, too.
6. Pork Chops with Whiskey Cream Sauce. Inviting over a couple o’ your best mates? Make these pan-seared pork chops, simmered with baby bella mushrooms and a rich cream sauce spiked with a splash of Irish whiskey. (Seriously, your kitchen will smell amazing.)
Serve these beauties with mashed or baby potatoes on the side.
