Do you eat your veggies? Are you looking for ways to eat more veggies? Because it turns out the old adage “Eat your vegetables!” is true – veggies can and do help us improve our overall health.
According to Harvard T.H. Chan School of Public Health:
- Half our plate should be fruits and veggies; ¼ should be healthy grains
- That leaves just 25% for protein…and that protein doesn’t need to be meat-based; plant-based proteins like beans, nuts and fish are rich in nutrients that go beyond protein.
An easy way to incorporate more vegetables is to keep them prepped and ready. When you’re hungry (or hangry!) you want food fast and so behold the Magic Veggie Bin.
It’s simply a bin full of fresh veggies that are washed and ready to go. It makes it so much easier to use them, and to eat more of them.
Magic Veggie Bin Tips:
- Use one large bin or several smaller bins to organize your veggies by type.
- No bin? No worries! Use resealable bags or Mason jars.
- Most veggies stay fresh longer with a little moisture. Wrap them in a damp paper towel often does the trick.
- If you aren’t going to use the leafy tops of radishes, carrots, or other vegetables, it’s best to remove them, as they tend to get mushy quickly.
- Some veggies are better stored unrefrigerated, such as potatoes, onions, garlic, tomatoes, and winter squash.
- Leafy greens last longer if you store them in the fridge unwashed; simply wash them as you need them.
