A goal has a plan, a wish has a genie. Turns out my New Year’s resolutions usually require a genie. But this year, I’m gonna fracture that fairytale and lose those 10 pounds. For reals. Because I have a plan, and it starts with pound cake. No, really! It does. The Lightened Almond Pound Cake Trifle has applesauce, sugar-free pudding, skim milk and berries (a super food!) – so this recipe is really dreamy in a goal-oriented kind of way … the perfect way to start the year!

Lightened Almond Pound Cake Trifle
Ingredients
- 1 cup water
- ¾ cup applesauce
- 1 oz. pkg. instant sugar-free vanilla pudding mix
- 1½ cups skim milk
- 8 oz. sugar-free non-dairy whipped topping, thawed
- 2 cups hulled and sliced fresh strawberries
- 2 cups fresh blueberries
- Plus more berries for garnish
Directions
Combine first 3 ingredients; stir to blend. Pour batter into a greased 9 x 5 loaf pan; bake as directed on the package. Cool completely; cube. Combine pudding and milk, whisk 2 minutes; fold in whipped topping. Layer cake cubes, pudding mixture and berries in a clear glass bowl or individual trifle bowls. Cover; chill 1 hour. Garnish with additional berries. Serves 10-12.
Tips and Hints
- If you don’t have applesauce, you can substitute yogurt (plain or flavored, fat-free or not).
- I added some blackberries to the mix, as strawberries and blueberries were super expensive at the grocery store this week. You could also use mandarin oranges (drained), kiwi, pineapple … virtually anything you have on hand.
- This recipe would also be good with Classy Chocolate Pound Cake Mix!
- We gave one bowl to our neighbors and they were so delighted! It’s fun to spring a surprise like this one on an unsuspecting neighbor.
- I have made the regular version of this recipe many times, and I have to say I really could not taste the difference. So going forward … I’ll save the calories and go with the lightened version.
